I like it with kidney beads.

But, if this is a question about the history of chili then it would be without beans. Long before there was refrigeration, chili was a method of preserving meat.  The crushed/ground chili's (peppers) were cooked with the ground or chopped meat. Basically a red stew. cooked down to thicken. Then it was put in vessels or crocks with a layer of lard on top to be stored in the root cellar.  This method allow you to just scrape the lard off and scoop out a portion. If it had beans in it, because of the carbohydrates , it would spoil quicker. Beans were stored dry then boiled and then added to the chili.

At officially judged chili contests chili MAY NOT HAVE BEANS !!!!

Although at unofficial contests like we used to have at Founder's Ranch beans were allowed.

Now I'm curious.

Sawmill Mary was raised in northern IlliNOIS and makes a "white chilli",  she uses chicken or lean pork and white beans.  I think the seasoning is otherwise as usual.

I had some Louisana gator chili that was pretty good. No beans. It was at a world championship chili contest.

IMO

Chili has beans in it.

Green chili or red chili not so much.

I like to eat chili (with beans) with some diced onions (raw, not cooked) and shredded cheese on top, liberal amount of both.

I still enjoy those heated discussions over the merits of the Events page.

But hey, y’all are missing out on the KY Jelly thread in the saloon, if ya just hang around here.

When It's just the Chili I like beans, but if it's on something (like hotdogs) I like it without. But I like it both ways if it's good Chili.

Beans are a side dish to chili.simmered slowly with salt pork (Bacon will work)and a little brown sugar and chili powder in a cast iron pan for hours to get that just right flavor

Kalamity Kathy FORCED me to make some Vegan Chili once........

It was for her sister who was coming back to visit TEXAS

after she had moved to California many years ago and married a Left Coast Computer Geek.

Anywho..... They thought it tasted Great and that they were eating Real Texas Chili.

But I get a little nauseous everytime I think about it.

Afterwards when Lucy wasn't in the room,

Tim asked me if I would'nt mind making him some Real Texas Chili next time they visited :D
